Linseed Muffins
12 dessertspoons linseeds (flaxseeds)
1 cup chopped dates
1/4 cup boiling water
1- 2 ripe bananas, mashed
60g melted butter, cooled
3 tsp baking powder
2 eggs, lightly beaten
1 tsp nutmeg or cinnamon to taste
makes 12 small or 6 large muffins
Preheat oven to 180 degrees C.
Soak choppped dates in boiling water.
Grind linseeds in spice/coffee/seed grinder until fine meal.
Combine mashed banana and nutmeg/cinnamon, dates and butter.
Fold through linseed meal, baking powder then eggs.
Place about 2 heaped dessertspoons into prepared muffin trays ( for 6 muffins ). Bake 25 -30 mins. Cool on rack.
One large muffin delivers the recommended amount of linseed considered effective for hot flushes and other issues.
